No. Only someone who can make a valid proof with your keys can spend your notes, the team included. A guardian can pause new deposits, for example until the audit; private sends and withdrawals always go through.
When you unshield, you can choose shielded Zcash as the destination. $VAULT trades against ZEC on Solana, so the app sells your $VAULT for ZEC, and NEAR Intents moves that ZEC to a shielded Zcash address. The unshield and the sale are public on Solana; where the ZEC lands is not. VAULT is an independent project, not affiliated with the Zcash team.
